For the 2026 season, the restaurant remains under the culinary direction of two-Michelin-starred Dutch chef Edwin Vinke, whose "kilometer zero" philosophy focuses on the raw, sustainable bounty of the Ibizan land and sea. The evening begins with a private valet transfer into the fortified walls of the citadel, followed by a descent into the island’s oldest wine cellar for a tasting.
